Aji pronounced /aH-Hee/ meaning chilli is a Peruvian chilli with a rich fruity flavour. Aji Amarillo is a medium heat chilli with an average of 75000 SHU when rehydrated. It can be used as a marinade, rub or can simply be added to salsas or used as a cooking ingredient. The Aji Amarillo is just sensational.

Unfortunately for this review, I bought the chilies to be used in a fermented sauce, which is a) still going and b) unlikely to give me the finer information on the chili flavour and quality.
However, what I can say is that the chilies came promptly and well packaged. I suspect they're heat dried, as they were reasonably dark in colour, rather than being sun dried. They say they're from Peru on the packet, I'm not sure if that's meant to be about the specific chilies or the variety in general (which is obviously Peruvian).
The chilies have a good smell, much like a raisin, as expected, and the smell of the fermenting sauce has got a fruitier smell than usual, but as mentioned, it's hard to be more specific
