Champion’s Breakfast

Here is a quick breakfast recipe that will support a champion all day.

Ingredients:

Corn Tortillas

Chipotle Chilli Powder

Eggs

Mexican Oregano

Tomatoes

Lettuce or Cucumber (diced)

Cheese

Avocado Oil/Olive Oil

Take as many tortillas as you think you need, four usually will do for most people.

Spread shredded cheese on them like in a mini pizza. Then sprinkle them with chipotle chilli powder before putting them in the oven until the cheese starts melting.

Take a frying pan and pour some avocado oil in it. Dice a beef tomato or a few cherry tomatoes and fry them slightly. then crack 3/4 eggs open and scramble them with the tomatoes in the pan. Add a good pinch of Mexican oregano.

Spread the egg/tomato mix on the tortillas and then put the lettuce or diced cucumber on the top.

Use some salt if you fancy it.

Ready to eat Champion's Breakfast.
