One of Belazu's signature ingredients, rose harissa was developed in 1995 from a secret recipe. Deep red in colour, it is an aromatic, complex Middle Eastern spice paste, skilfully blended from flavourings including chilli, garlic and rose petals. Characterised by a slow-burning chilli heat, balanced with sweet smokiness, it adds real depth of flavour. In North Africa, harissa is traditionally used to add a piquant kick to stews, soups and couscous. It also works well stirred into crème fraiche or used in marinades.
